We all have a midnight craving at some point, and if we don't satisfy it, we can't even think about going to sleep... You might even try some of these leftover pancakes as a midnight snack!
Ingredients
2 Tbsp light brown sugar
1/2 cup oat flour
1/2 cup all-purpose flour
1 tsp baking powder
1 tsp baking powder
1/8 tsp nutmeg
2 large eggs
3 very ripe bananas, blended or food processed
2 Tbsp (1 oz.) non-fat sour cream or buttermilk
Milk (to consistency)
1 Tbsp butter (for cooking)
Maple syrup as desired
Directions
1. Mix first 6 ingredients together in a bowl.
2. Whisk in the sour cream or buttermilk, the eggs, and the bananas.
3. If the mixture is too thick, add milk a few tablespoons at a time.
4. Preheat a non-stick pan over low to medium heat. Wipe a paper towel that has been rubbed with butter on the bottom of the pan (remove any excess and use again before cooking the next pancakes).
5. Using a ladle, pour some batter into the pan.
6. Flip pancakes when the underside is golden brown, and cook until no longer wet inside.
7. Keep warm and serve with maple syrup and your choice of chopped or sliced fruit.
Notes
Dr. Stern's and Chef Marc Bauer's notes: Cooking in a non-stick pan allows you to use butter sparingly. Ripe bananas are very sweet and give these pancakes a dark color; but beware of burning them, as the sugar from the bananas causes them to brown faster. You can replace the sour cream with a flavored yogurt to add another flavor dimension.
